Becky's Apple Torte
1 egg
3/4 cup sugar
1/2 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1 cup tart apples, chopped, such as granny smith
1/2 cup walnuts, chopped
1 teaspoon almond extract
1/2 cup dried cranberries (optional)
- Preheat oven to 350 degrees
- In a mixing bowl, beat the egg until light and fluffy
- Add sugar gradually and beat until it is dissolved
- In a separate bowl, stir together flour, salt and baking powder
- Fold the flour mixture into the egg mixture
- Stir in apples, nuts, extract, and cranberries
- Pour batter into 8x8 pan or 10-12 silicone cups
- Bake until light brown and puffed, about 15-25 minutes
