Becky's Apple Torte

1 egg
3/4 cup sugar
1/2 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1 cup tart apples, chopped, such as granny smith
1/2 cup walnuts, chopped
1 teaspoon almond extract
1/2 cup dried cranberries (optional)
  1. Preheat oven to 350 degrees
  2. In a mixing bowl, beat the egg until light and fluffy
  3. Add sugar gradually and beat until it is dissolved
  4. In a separate bowl, stir together flour, salt and baking powder
  5. Fold the flour mixture into the egg mixture
  6. Stir in apples, nuts, extract, and cranberries
  7. Pour batter into 8x8 pan or 10-12 silicone cups
  8. Bake until light brown and puffed, about 15-25 minutes
