Devra's Streusel Noodle Casserole
1 pound medium egg noodles cooked per package instructions
1 stick of butter
6 oz. Philadelphia Cream Cheese
3/4 cup sugar
6 eggs, beaten
1 cup milk
1 cup apricot nectar
1 large can crushed pineapple plus juice
- Stir butter through hot drained noodles to coat.
- Mix cream cheese and sugar.
- Beat eggs and add to cheese and sugar mixture.
- Add milk, pineapple and apricot nectar.
- Mix with noodles and pour into buttered 3 quart rectangular baking dish. This mixture
will be very loose.
TOPPING
3 cups crushed corn flakes (Do NOT use prepared cornflakes crumbs)
3/4 stick butter, softened
1 teaspoon cinnamon
1/4 cup sugar
- Mix sugar, cinnamon and softened butter together. Work in crushed cornflakes, making a streusel. Sprinkle over top of noodles.
- Bake 45 to 60 minutes at 350 degrees F. Let cool before cutting.
Noodles seem fluffier if covered with foil for the first 20 minutes of baking.
This freezes well. To reheat, thaw and pour 1/4 cup milk evenly over top.
