Ron's California Casserole

  1. Saute 3/4 cup chopped onions, 3/4 cup chopped green peppers in 1/4 cup salad oil in a large skillet.
  2. Brown and drain 1 to 2 lbs ground beef, depending on preference.
  3. Add onions and green peppers to the meat.
  4. Add 1 #303 can cream style corn, 8 oz can tomato sauce, 10 1/2 oz can of tomato soup undiluted, 8 oz can large pitted ripe olives sliced, 4 oz can pimientos diced to meat mixture.
  5. Season with 1 1/2 tsp salt, 1/2 tsp chili powder, 1/8 tsp dry mustard and 1/8 tsp pepper.
  6. Cook 8 oz package medium noodles until just tender and drain.
  7. Mix noodles into meat mixture in a 3 quart casserole.
  8. Sprinkle with 1 cup grated chedder cheese (sharp, extra sharp, or Colby).
  9. Bake in moderate oven 350 degrees F for 45 minutes, uncovered. Serve immediately, although this does do well as warmed over.

I sometimes add jalapenos and more onions.
